Chicken wings

Let's talk chicken...chicken wings that is. Start with a good quality wing. Wash your wings and pat dry. I've found that seasoning is a personal preference. This time I mixed a traditional bbq seasoning, a mesquite seasoning and sugar in the raw. Sprinkle on wings, spritz with apple juice to keep the seasoning intact. We cook wings on the smoker, but you can also cook on the grill or even in the oven, temp of 325. Total cook time is approximately 90 minutes. Place on smoker, after 30 minutes spritz with apple juice, cook another 15 minutes and spritz again...and one more time cook for 15 minutes and spritz again. At this point you've cooked them for an hour. Cook for another 10 minutes. Turn up to 400 degrees, sauce with your favorite bbq sauce, cook for another 10 minutes, flip wings and sauce again, cook for another 10 minutes. Remove from smoker or grill and enjoy. Wings are not a walk away and forget them, but they are so worth the effort. Mike's only complaint was that there weren't enough...I made 4 pounds.
