Poor mans burnt ends
Preheat smoker to 275. Start with a well marbled chuck roast, liberally season with salt, pepper and garlic powder. Cook until meat reaches 165, about 4 hours. Then wrap in butcher paper or aluminum foil, I prefer butcher paper, cook until meat reaches 195, about 1 hour. Pull from smoker, set aside for 15-20 minutes, just long enough to cool a bit so you don't burn your fingers trying to cut it. While resting, mix 1/2 cup of BBQ sauce and a 1/4 cup of brown sugar. Set aside about 3 tabelspoons of sauce. Cut roast into one inch chunks, place in an aluminum pan, toss with sauce and cover. Place back in smoker for another hour. Toss with remaining sauce and heat for another 10-30 minutes or so. Total cook time 6.5 hours.
